Homemade Sauerkraut Recipe

Fermentation Time: 2 weeks
Ingredients
1 head of cabbage
1 tablespoon sea salt
1 teaspoon caraway seeds (optional)
Water (if needed)
Mason jar or fermenting crock
Directions
Prepare the cabbage:
Remove the outer leaves of the cabbage and slice it thinly.
Add seasonings:
Mix the sea salt and caraway seeds (optional) into the cabbage.
Massage the cabbage:
Massage the cabbage with your hands for 10 minutes until it releases its juices.
Pack the jar:
Pack the cabbage into the jar, pressing it down so the liquid covers the cabbage.
Add weight and water:
Place a weight on top to keep the cabbage submerged and add water if needed.
Cover and ferment:
Cover loosely and place the jar in a cool, dark spot for 2 weeks.
Store:
Once fermented, seal the jar tightly and store in the fridge.
