Homemade Sauerkraut Recipe

Preparation Time: 30 minutes

Servings:  4-6 people

Fermentation Time: 2 weeks 

Ingredients

  • 1 head of cabbage

  • 1 tablespoon sea salt

  • 1 teaspoon caraway seeds (optional)

  • Water (if needed)

  • Mason jar or fermenting crock

Directions

  1. Prepare the cabbage:

    • Remove the outer leaves of the cabbage and slice it thinly.

  2. Add seasonings:

    • Mix the sea salt and caraway seeds (optional) into the cabbage.

  3. Massage the cabbage:

    • Massage the cabbage with your hands for 10 minutes until it releases its juices.

  4. Pack the jar:

    • Pack the cabbage into the jar, pressing it down so the liquid covers the cabbage.

  5. Add weight and water:

    • Place a weight on top to keep the cabbage submerged and add water if needed.

  6. Cover and ferment:

    • Cover loosely and place the jar in a cool, dark spot for 2 weeks.

  7. Store:

    • Once fermented, seal the jar tightly and store in the fridge.
